    Prep: Rinse the Poongar Aval 2–3 times in a strainer to remove any natural dust. Because it is a sturdy, unpolished grain, soak it in a bowl of clean water for about 10 minutes (until it yields slightly when pressed).

    Method: Drain the water thoroughly. Heat a pan with mustard seeds, urad dal, green chilies, and a pinch of asafoetida. Add the soaked Poongar flakes and a splash of water if needed. Cover and steam on low heat for 5 minutes to lock in the nutrients.
