Foxtail Millet, traditionally known as Thinai, holds a sacred place in ancient Tamil literature as the preferred offering to the deities of the hills. Biologically, it is a powerhouse of Vitamin B12 and protein, making it an essential switch for those looking to repair muscle tissue and enhance neurological function. While white rice is often stripped of its vitality, Ayini Foxtail Millet retains its bran layer, providing a dense concentration of antioxidants that scavenge free radicals and protect the heart from oxidative stress.

💡 How to Prepare / Use (Step-by-Step)

Foxtail Millet has a delicate structure but requires proper hydration to ensure the grains are soft and separate.

Prep (Rinse & Soak): Wash the grains in cold water until the water runs clear. Soak the millet for at least 2 to 4 hours. This reduces the cooking time and ensures that the complex proteins are easily broken down during digestion.

Cook/Method: Use a water ratio of 2:1 (water to millet). For a fluffy, rice-like texture, add the soaked grains to boiling water, cover with a tight lid, and simmer on the lowest heat for 8–10 minutes. Once the water is absorbed, turn off the flame immediately.

Serve/Enjoy: Allow the millet to "rest" for 5 minutes before fluffing with a fork. It is the gold standard for making Thinai Pongal, Biryani, or sweet Payasam. It also makes an excellent base for Mediterranean-style grain salads or lemon rice.
