Dew Gram / Nari Payaru
Dew Gram, or Matki, is one of nature’s most resilient legumes, traditionally grown in arid regions where it absorbs the concentrated minerals of the sun-baked earth. While mass-produced pulses are often polished to remove their "dusty" appearance, Ayini Organic Dew Gram is kept unpolished to preserve its high concentration of Zinc and Vitamin B1. This "drought-hardy" grain is a biological powerhouse designed for endurance, offering a unique thermogenic effect that helps the body burn energy more efficiently compared to hybrid lentils.

💡 How to Prepare / Use:
Dew Gram is uniquely versatile and is one of the best candidates for sprouting, which exponentially increases its vitamin content.
The Prep (Soaking or Sprouting): * For Cooking: Wash and soak for 4–6 hours to soften the skin.
For Sprouting: Soak for 8 hours, drain, and keep in a moist cotton cloth for 12–24 hours until tiny "tails" appear. This makes the nutrients highly bioavailable.
The Quick Cook: Being small and split-resistant, Dew Gram cooks very fast. Pressure cook for only 2–3 whistles or steam in an open pot for 12–15 minutes until tender but not mushy.
Serve & Enjoy:
Traditional: Make a spicy Matki chi Usal or a South Indian Sundal.
Health: Toss sprouted Dew Gram with chopped onions, tomatoes, and lemon juice for a high-protein raw salad.
Crunch: Dry-roast the cooked beans for a healthy, protein-rich alternative to fried snacks.
