💡 How to Prepare / Use

Due to their thick, nutrient-dense outer skin, Ayini Black Chickpeas require a patient preparation process to unlock their creamy interior.

    The Deep Soak: Wash the chickpeas and soak them in plenty of water for at least 8 to 12 hours. This long soak is essential to soften the skin and significantly reduce the phytic acid, making the nutrients more bioavailable.

    The High-Pressure Cook: Drain and rinse. Pressure cook with fresh water (3:1 ratio) and a pinch of rock salt for 6–8 whistles. They should be soft enough to mash between two fingers but still hold their structural integrity.
